Delicious lactarius is a common forest mushroom that exudes an orange-red juice (or latex) when cut. The outer flesh often turns green when bruised. There is considerable difference of opinion about their culinary value; but, in Russia, they are a commonly preserved in salt and consumed with shots of vodka.
